Collard Wraps

These wraps are very healthy! The filling is corn, red bell pepper, wild rice, spicy barbecue peanuts, green onions and a lemony mustard dressing to tie it all together.

Collard Wraps

1/2 cup Spicy Barbecue Pickled Peanuts or raw peanuts
1 cup wild rice cooked according to package directions
3 green onions, chopped
1/2 red bell pepper diced
1 carrot, grated
1/2 cup corn
2 large collard green leaves
1 Lemon Mustard Vinaigrette

1. Combine peanuts, wild rice, green onions, bell pepper, carrot and corn.

2. Toss with vinaigrette.

3. Lay one leave flat on a cutting board and trim off stem end. Remove half of the thickest portion of the stem.

4. Scoop 1/2 cup of the filling onto the center of the leaf. Fold the bottom stem end upwards over the filling. Holding this, fold the sides into the center. Holding this, roll the wrapped filling forward.

5. The wrap can be tied together with a string, piece of collard green over the center or wrapped entirely in a piece of plastic wrap.

  1. I found this website from your post on the NY Times article “The Challenge of Going Vegan.” I could have written that post myself! I have been phasing into a vegetarian diet over the last couple of years and have gone vegan this year. I feel much better and sleep better at night, too, knowing that I am not contributing to the animal factory farming industry or suffering of another sentient being. I tell people my aim is to be a compassionate eater and cook, AND it is much more environmentally sustainable.
